Bollinger Vieilles Vignes Francaises is considered to be the Bollinger’s flagship and prestige cuvee – the 2000 vintage is no exception. Production is limited, with bottles individually numbered; the annual production of this champagne has varied between 3000 and 5000 bottles, making a very rare and sought after champagne.


 


The grapes are grown from 2 very small plots of “ungrafted rootstock” which is planted in low density – approximately 3000 vines per hectare.


 


Made entirely from Pinot Noir from pre-phylloxera grapes harvested in a small walled vineyard. This Blanc de Noirs of sumptuous quality and finesse that lasts for year.


 


The vines are propogated by marcottage (or layering), where a small proportion of an aerial stem is trained under the soil and grows roots whilst still attached to the parent plant before becoming an independent plant in its own right. The vines produce extremely small yields, which enable the grapes to reach extraodinarily high maturity; a sign of a fine wine. Vieilles Vignes Francaises is a Blanc de Noirs. It was fermented in small, aged, oak barrels. After bottling, the second fermentation and cellar ageing are conducted under natural cork. The wines age in the cellar for at least 6 years, sometimes more. After manual riddling and disgorging, Vieilles Vignes Francasies receives a low dosage and then rests for a minimum of 3 months prior to shipment, time for the wine to recover from the shock of disgorgement.
