Any Dom Perignon Vintage Champagne has 3 distinct seasons or peaks in its maturity. The first such period is at approx 7 years and is known as 'phase de plenitude' and this is when the majority of the champagne is released into the market place. The champagne which is not sold enters the "OEnotheque" (wine Library) Kept undisturbed in their original bottles in the great celler's at Hautvillier's.


 


These particular champagnes are released either during the second peak, between 14 to 25 years, or the third peak at 25+ years. The number of bottles is incredibly limited and their scarcity is a further assurance of an unforgettable experience. To ensure its excellence each and every bottle is tasted and approved by a Dom Perignon oenologist; the last step before departing the Dom Perignon cellars.


 


Everything started in 1668, when the young monk Pierre Pérignon was appointed cellar master of the Benedictine Abbey of Hautvillers, France. Paying homage to the divine creator, he made it his mandate to create the 'best wine in the world'. Dom Pérignon pursues three centuries later the work of the man who is regarded as the founder of Champagne. Launched only as a vintage, Dom Pérignon is blended to achieve a perfect equilibrium of black and white grapes.


 


Only the very finest Pinot Noir and Chardonnay grapes are picked from any of the 17 Grand Crus and all Premiers Crus of Champagne, including the celebrated Hautvillers. All Dom Perignon Champagne is aged for a minimum of 7 years, sometimes decades, to accomplish its special style; vibrant, tactile and complex.
